Mashed Potato and Beef Casserole
Ingredients
4 cups mashed potatoes (8 medium MountainKing Butter Gold Potatoes)
1 pound ground beef
1 - 16 ounce package frozen vegetable medley
1 cup chopped white onions
2 cups grated cheddar cheese
1/2 stick butter
1 tablespoon vegetable oil
salt & pepper to taste
 
Directions
1. Preheat oven to 425 degrees.
2. In a medium pan over medium-high heat, add vegetable oil. Add onions, salt and pepper to taste, and sautee 2-3 minutes until onions are transluscent. Add beef and cook thoroughly.
3. Remove meat from pan, straining most of the juices.
4. In a medium baking dish, add beef and onion mixture. Layer frozen vegetables on top. Then layer cheddar cheese. Top with mashed potatoes (recipe). Dollup butter on top of potatoes.
5. Place casserole in oven and bake 15-20 minutes, until potatoes form golden peaks and butter is melted.
6. Serve immediately.
