| Ingredients |
| 4 cups mashed potatoes (8 medium MountainKing Butter Gold Potatoes) |
| 1 pound ground beef |
| 1 - 16 ounce package frozen vegetable medley |
| 1 cup chopped white onions |
| 2 cups grated cheddar cheese |
| 1/2 stick butter |
| 1 tablespoon vegetable oil |
| salt & pepper to taste |

| Directions |
| 1. Preheat oven to 425 degrees. |
| 2. In a medium pan over medium-high heat, add vegetable oil. Add onions, salt and pepper to taste, and sautee 2-3 minutes until onions are transluscent. Add beef and cook thoroughly. |
| 3. Remove meat from pan, straining most of the juices. |
| 4. In a medium baking dish, add beef and onion mixture. Layer frozen vegetables on top. Then layer cheddar cheese. Top with mashed potatoes (recipe). Dollup butter on top of potatoes. |
| 5. Place casserole in oven and bake 15-20 minutes, until potatoes form golden peaks and butter is melted. |
| 6. Serve immediately. |
